Ambuyat is the national dish of Brunei, and a local specialty in the Malaysian states of Sarawak and Sabah. Derived from the inside of a sago palm, it is extremely starchy and sticky, with a texture similar to glue. It is eaten with a special bamboo chopstick, then dipped into many different sauces.
